Coffee and a homemade coconut date ball #afterbreakfastsnack
Almond/date/coconut energy balls (aka homemade lara bars!) These are SO GOOD. Totally vegan and all-natural, good for a little pre- or post-workout energy kick, or to satisfy a sweet tooth anytime of day. I kind of combined this recipe and this recipe into this:
1. Rough chop ~10 dates and 1/2 cup of raw unsalted almonds, and toss in food processor. Add ~1/4 cup shredded unsweetened coconut and a pinch of sea salt.
2. Pulse away until you have a crumbly mixture.
3. Add a couple tablespoons of water and process that until the mixture starts to gather itself into a ball. (Go easy on the water cuz you don’t want them to be too gooey. You can always add more water if it is too dry)
4. Scrape into a bowl, cover with plastic wrap and refrigerate to let the mixture firm up a bit. When you are ready, roll into ~1 inch balls.
5. Roll the balls in shredded coconut to keep them from sticking to anything else. Enjoy, or wrap in plastic wrap and keep in the fridge until you are ready to enjoy!
I’ve never successfully made homemade black bean burgers, they just don’t seem to come out very good. They taste ok but they tend to fall apart in the pan. But they always looks so delicious in the pictures. I’m going to try this one (click picture for recipe) because it has ketchup in it, and I love ketchup :) Stay tuned. Black Bean Burger
mid morning muscle building snack! oatmeal + peanut butter + greek yogurt + drizzle of honey.
Sidenote: LOVE this brand of quick oatmeal, found in Target—comes in great single serving packets that also double as a measuring cup for the water, plus it’s organic and has no added sugar, plus the whole box costs UNDER $2 (5 packets). Oh and it tastes really good.

It’s CSA Thursday…and I have a mystery item! Farmer Pam from Calvert Farms continues to amaze with the piles of gorgeous veggies she distributes each week. Guesses as to what these two cute little herbs are? I know the one on the left, not sure about the one on the right though…help me out!
CSA Thursdays! No mystery items today, just a gorgeous cornucopia of deliciousness. Happy jojo. The key to participating in a CSA and not letting the food go bad is immediately cutting it up and digging in upon getting it in your house…DONE. Also, having a roommate who is a bottomless pit helps. That would be my husband in this case.
This was a picture of a gluten-free brunch I shared with a couple fabulous ladies the other weekend. In the center are roasted golden beets topped with raw shaved red beets, sprinkled with goat cheese and balsamic. Plus GF blueberry muffins, and my fruit salad since I don’t know any creative gluten free recipes…yet!
