This soup came out soo yummy, and I was able to use mostly ingredients from my CSA—the squash, carrots, celery, and onion were direct delivery from Calvert Farm. (I am loving this CSA).
note: the recipe doesn’t say to do this but I used the immersion blender at the end to blend everything together, not completely smooth so it still had some texture and you get a surprise bite of squash every now and then. Sprinkle the green onion/parsley on very last, don’t blend that up.
