This looks yummy and really not hard at all. The recipe calls for three things you may not have in your cupboards, but they are all great staples to have on hand if you want to do any Thai/asian inspired cooking:
-fish sauce
-peanut oil
-Thai red curry paste
You can change the veggies around, or do tofu instead of chicken, but these three ingredients will give it that extra oompf above a plain stir-fry.
